Meatballs! An Original Recipe.

Hey so this latest meal I have for you is one that just popped out of my head and I thought I would share it with you, recipe and all! let’s just get right to it shall we:( also I apologize for the fuzzy pictures, someday i’ll have an actual camera, until then this is what ya get!)

preheat oven to 350 degrees f.

first you want to roughly chop one onion and 3 carrots

add 4 mushrooms to a food processor and pulse until finely textured, pick out any big pieces

place veggie mixture into a large mixing bowl, add your 1 lb of ground meat, what ever you prefer, i’m using organic ground beef

add 2 tsp salt,1 tsp garlic powder,1 1/2 chili powder, 1/2 tsp pepper. mix with spoon. add 1 egg, mix with spoon.  make into golf ball sized meatballs.

in a large skillet over medium high heat, add oil or butter, then add meatball and brown on 2 sides. don’t worry about cooking all the way through, the oven will take care of that.

speaking of which , add browned meatballs to a baking dish like so

and put in your 350 degree f oven for 20 or so min or until meatballs register at 170 degrees on an instant read thermometer.

tada! serve alone or over rice or with potatoes, or whatever else you can think of. they are pretty versatile in my opinion.

Optional: gravy. take drippings from the baking dish and add them to a sauce pan. add 2 tablespoons flour and 2 cups of milk. season to taste. bring to a boil stirring constantly, turn down heat to medium and cook for 1 min or so. ladle over meatballs.

Recipe for meatballs( hamburger meatballs?)

3 carrots

1 onion

4 mushrooms

1 pound ground meat

2 teaspoons salt

1 teaspoon garlic powder

1 1/2 teaspoon chili powder

1/2 teaspoon pepper

1 egg

Preheat oven to 350 degrees f. Cut up veggies roughly and put in food processor. pulse until fine. pick out any large pieces. put in large mixing bowl. add in ground meat and seasoning. mix with spoon. add egg, mix with spoon. form into golf ball sized meatballs. in a large skillet or medium high heat, add oil or butter. place meatballs and brown on 2 sides. add browned meatballs into baking dish, place in oven and bake for 20 min or until they register at 170 degrees f  on instant read thermometer . serve alone or over rice.

Quinoa Patties with Fresh Tomatoes

Alright, so this is the second time I have made this recipe, I got it from epicurious.com. Spoiler alert, this recipe ,for me anyways, is a fail. I just can’t seem to get it right. Out of all the patties I made, these two were the only ones that kind of came out right:

Which is fine, just not very good for photos. Anyhoo, this is what I did: first I got 2 cups of quinoa, rinsed it , put it in a medium sauce pan with 3 cups of water and let that simmer for 25-30 mins. (That was from the actually recipe, I honestly have no idea how long I let it simmer, I just kept my eye on it until it was done,haha). While that was going, I roughly cut half a yellow onion and 2 1/2 carrots. Put those in my food processor along with some salad greens I had in the fridge:

wow, I need to get a better camera, sorry for the picture quality, I was using my phone.

I then pulsed everything until it looked like this:

poured that mixture into a large mixing bowl , added 3 tblsp garlic powder,1/3 cup smoked gouda cheese, 4 eggs, and about 2 cups of bread crumbs that I made in my food processor.

the recipe only calls for 1 cup bread crumbs, but I found that I needed the extra cup to hold them together. once the quinoa was done and cooled I added all of it to the mixture in the bowl and combined it.

then I shaped them into patties and put them onto a buttered hot griddle, on the flat side. like so:

now the recipe says to cook them in a skillet and cover them. some how I missed that part. anyway, it also said to cook for 7-10 minute until the bottoms are deeply browned, then flip and cook for another 7 minutes. i’m pretty sure that’s exactly what I did…or maybe not. when I got finished cooking all the patties, I think I ended up with 10 or so patties. I just wish they would have stayed together, oh well, they still tasted delicious. The tomatoes I just cut in half and tossed with Tuscan style Italian dressing. pretty simple, pretty nomnomnoms.

tonight i’m making chicken and rice, so I might not blog about it, unless anyone is interested anyway. but I figure everyone has done chicken and rice before, so yeah. thanks for reading!
